    Preheat the oven

    Preheat your oven to 350°F (175°C).

    Cook the brown rice

    In a medium saucepan, combine 1 cup of brown rice with 2 cups of water and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 45 minutes or until rice is tender and water is absorbed.

    Sauté the vegetables

    In a large skillet over medium heat, melt 1 tablespoon of butter. Add the chopped onion and minced garlic, and sauté for about 5 minutes until the onion is translucent.

    Add broccoli

    Add the broccoli florets to the skillet and cook for an additional 3-4 minutes until they are bright green and slightly tender.

    Mix the casserole ingredients

    In a large mixing bowl, combine the cooked brown rice, sautéed vegetables, shredded cheddar cheese, milk, cream of mushroom soup, salt, pepper, and paprika. Stir until well combined.

    Grease a 9x13 inch baking dish and pour the broccoli rice mixture into it, spreading it evenly.
