    Rinse the beef liver under cold water and pat it dry with paper towels. Trim any visible membranes or connective tissue and slice it into thin pieces, about 1/4 inch thick.

    Peel and slice the onions into thin rings or half-moons, ensuring they are uniform in size for even cooking.

    In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat. Once the oil is shimmering, add the sliced liver to the pan in a single layer (you may need to do this in batches). Cook for about 2-3 minutes on each side until browned but still slightly pink in the center. Remove the liver from the skillet and set aside.
