Preparation
Prepare the Lettuce
Carefully separate the leaves of the iceberg lettuce, making sure to keep them intact. Cut the head of lettuce into quarters, creating wedges. Rinse each wedge under cold water and pat dry with paper towels.
Prepare the Tomatoes
Wash the beefsteak tomatoes thoroughly. Cut each tomato into thick slices or wedges, depending on your preference. Set aside for assembly.
Assembly
Plate the Wedges
On a serving platter, arrange the iceberg lettuce wedges upright. Place them evenly spaced apart for presentation.
Add Tomatoes
Nestle the slices or wedges of beefsteak tomato around the lettuce wedges, or on top if you prefer.
Drizzle the Dressing
In a small bowl, whisk together the balsamic vinegar and applewood smoked thousand island dressing until combined. Drizzle the dressing generously over the lettuce and tomatoes.
