    Prepare the Ingredients

    Dice the cooked prime rib, potatoes, bell peppers, and onion into uniform pieces to ensure even cooking.

    Cook the Potatoes

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes, season with salt and black pepper, and sauté until golden brown and crispy, about 10-15 minutes. Stir occasionally to prevent sticking.

    Sauté the Vegetables

    Once the potatoes are almost cooked, add the diced onion and bell peppers to the skillet. Continue to sauté for another 5-7 minutes until the onions are translucent and the bell peppers are tender.

    Stir in the diced prime rib and cook for an additional 3-5 minutes just to heat through. Adjust seasoning with more salt and pepper if needed.

    In a separate non-stick skillet, heat the remaining 2 tablespoons of olive oil over medium-low heat. Crack the eggs into the skillet and cook until the whites are set but the yolks remain runny, about 3-4 minutes. For over easy, gently flip the eggs and cook for an additional minute.

    While the eggs are cooking, warm the chipotle sauce in a small saucepan over low heat.

    Divide the prime rib hash among four plates. Top each serving with an over-easy egg, drizzle with warm chipotle sauce, and garnish with chopped chives.
