Prepare the Biscuit Dough
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Mix well.

Cut in the Butter
Add the unsalted butter to the flour mixture and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Milk and Cream
Slowly pour in the milk and heavy cream, mixing until just combined. Do not overmix.

Shape the Biscuits
Turn the dough onto a floured surface and gently pat it to a 1-inch thickness. Cut into rounds using a biscuit cutter.

Bake the Biscuits
Place the biscuits on a baking sheet and bake in a preheated oven at 425°F (220°C) for 12-15 minutes, or until golden brown.
Sausage Gravy

Cook the Sausage
In a large skillet over medium heat, cook the ground sausage until browned and crumbled, about 5-7 minutes.

Make the Roux
Sprinkle the flour over the cooked sausage and stir to combine, cooking for an additional 1-2 minutes.

Add the Milk
Gradually whisk in the milk, stirring constantly until the mixture thickens, about 5 minutes.

Season the Gravy
Season with salt and black pepper to taste. Let simmer on low heat while you prepare the biscuits.

Finish with Chives
Just before serving, stir in the chopped chives into the gravy.
