Method

Cooking Pasta

  1. 1

    Boil the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

Preparing Sauce

  1. 2

    Cook Pancetta

In a large skillet, cook the pancetta over medium heat until crispy, about 5-7 minutes. Remove from heat and set aside.

  2. 3

    Mix Eggs and Cheese

In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combining Ingredients

  1. 4

    Combine Pasta and Pancetta

Once the spaghetti is cooked and drained, add it to the skillet with the pancetta. Toss to combine.

  2. 5

    Add Egg Mixture

Remove the skillet from heat. Quickly pour the egg and cheese mixture over the pasta while tossing continuously to create a creamy sauce. If needed, add reserved pasta water to reach desired consistency.

Serving

  1. 6

    Garnish and Serve

Serve the spaghetti carbonara immediately, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
