Cold Brew Coffee Preparation

Combine Coffee and Water
In a large jar or pitcher, combine the coarsely ground coffee with the cold water. Stir gently to ensure all the coffee grounds are saturated.

Steep
Cover the jar or pitcher and let it steep at room temperature for 12-24 hours, depending on your desired strength.

Strain
After steeping, strain the coffee through a fine-mesh sieve or coffee filter into another container to remove the grounds.
Piloncillo & Cinnamon Syrup Preparation

Combine Ingredients
In a small saucepan, combine the piloncillo, water, ground cinnamon, and the cinnamon stick.

Heat and Stir
Heat the mixture over medium heat, stirring until the piloncillo is completely dissolved.

Simmer
Once dissolved, allow the syrup to simmer for about 10 minutes until slightly thickened.

Whip the Cream
In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract.

Beat until Peaks Form
Using a hand mixer or stand mixer, beat the mixture until soft peaks form. Be careful not to overwhip.
Assembly

Combine Cold Brew and Syrup
In a glass, pour 1 cup of cold brew coffee and stir in 2-3 tablespoons of the piloncillo & cinnamon syrup, adjusting to taste.

Top with Cream
Spoon the whipped cream on top of the cold brew mixture.
