Cook the Pasta
In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.

Cook the Pancetta
While the pasta is cooking, heat a large skillet over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Prepare the Sauce
In a medium bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combine Pasta and Pancetta
Once the spaghetti is drained, add it to the skillet with the pancetta. Toss to combine and allow the residual heat to warm the pasta.

Add the Sauce
Slowly pour the egg and cheese mixture over the pasta, tossing quickly to coat the spaghetti without scrambling the eggs. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.

Season and Serve
Taste and adjust seasoning with salt and additional black pepper, if necessary. Serve immediately, garnished with freshly chopped parsley.
