Panna Cotta Base

    Prepare Gelatin

    In a small bowl, combine the gelatin powder with cold water. Let it sit for about 5 minutes until it blooms.

    Heat Cream Mixture

    In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir occasionally until the sugar is dissolved and the mixture is hot, but not boiling.

    Add Gelatin

    Remove the saucepan from heat. Add the bloomed gelatin and vanilla extract to the cream mixture, whisking until fully dissolved.

    Pour into Molds

    Pour the mixture into individual serving cups or molds. Allow it to cool to room temperature.

    Chill

    Cover the cups with plastic wrap and refrigerate for at least 4 hours, or until set.

Berry Sauce

    Prepare Berry Sauce

    In a medium saucepan, combine the mixed berries, granulated sugar, and lemon juice.

    Cook Sauce

    Cook over medium heat, stirring gently until the berries have released their juices and the mixture begins to simmer, about 5-7 minutes.

    Thicken Sauce

    If desired, mash some of the berries for a smoother sauce. Allow the sauce to simmer for an additional 2-3 minutes until slightly thickened.

    Cool Sauce

    Remove from heat and let the sauce cool to room temperature. If you prefer it cold, refrigerate until ready to serve.
