Prepare Tortilla Chips

    Cut and Fry Tortillas

    Begin by cutting the corn tortillas into quarters to form triangles. Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the tortilla triangles in batches and fry until they are golden brown and crispy, about 2-3 minutes per side. Remove the fried chips and place them on a paper towel-lined plate to drain excess oil.

Make Chipotle Salsa

    Blend Salsa Ingredients

    In a blender, combine the tomatoes, chipotle peppers in adobo, garlic, diced onion, and salt. Blend until smooth. Pour the salsa into a saucepan and heat over medium heat until warmed through, about 5-7 minutes. Adjust seasoning if necessary.

Assemble Chilaquiles

    Combine Chips and Salsa

    In a large serving dish, layer the fried tortilla chips and pour the warm chipotle salsa over the top, making sure to coat the chips evenly.

    Slice the avocado and sprinkle it over the chilaquiles. Crumble the queso fresco on top, followed by thinly sliced onion and chopped cilantro. Drizzle with crema for added creaminess.
