Once boiling, stir in baking soda, which will help prevent the milk from curdling. Reduce heat to low.

Simmer the Mixture
Let the mixture simmer, stirring frequently for about 1 to 1.5 hours until it thickens and turns a caramel color.

Once done, remove from heat and stir in the vanilla extract. Let it cool before transferring to a jar.

Peel the bananas and slice them into rounds.

In a small bowl, combine the cinnamon and sugar.

Chill the Mixing Bowl
Place your mixing bowl and whisk or beaters in the freezer for about 10 minutes to chill.

In the chilled bowl, add heavy cream, powdered sugar, and vanilla extract. Whip on medium speed until soft peaks form.
