    Prepare the Potatoes

    Wash and peel the Ratte potatoes, then cut them into thin slices.

    Cook the Bacon and Onions

    In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and set aside. In the same skillet, add sliced onions and cook until they are translucent.

    Combine Ingredients

    Add the sliced potatoes to the skillet with the onions. Stir in the heavy cream, bacon, salt, and pepper. Mix well to combine.

    Assemble the Tartiflette

    Transfer the potato mixture into a baking dish. Top with slices of Sauvagine cheese, covering the entire surface.

    Preheat the oven to 180°C (350°F). Bake the dish for about 30-35 minutes, or until the cheese is melted and bubbly, and the potatoes are tender.
