Main Ingredients

Method

Preparation

  1. 1

    Sauté the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 30-40 minutes until they are caramelized and golden brown.

  2. 2

    Add Garlic and Deglaze

Stir in the minced garlic and cook for an additional 1-2 minutes. Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom.

  3. 3

    Simmer the Soup

Add the beef broth, thyme, bay leaf, salt, and black pepper. Bring to a simmer and let it cook for about 30 minutes to meld the flavors.

  4. 4

    Prepare the Toppings

While the soup is simmering, preheat the oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and toast them in the oven until golden brown.

  5. 5

    Serve the Soup

Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, place a toasted baguette slice on top, and sprinkle generously with grated Gruyère cheese.

  6. 6

    Broil

Place the bowls under the broiler for about 2-3 minutes, or until the cheese is bubbly and golden brown. Serve hot.
