    Prepare the Sweetbreads

    Soak the veal sweetbreads in cold water for about 2 hours, changing the water frequently. After soaking, blanch them in boiling salted water for 5 minutes, then drain and let cool. Remove any membranes and excess fat.

    Sauté the Aromatics

    In a large skillet, melt 1 tablespoon of butter over medium heat. Add the chopped shallots and minced garlic, sautéing until soft and translucent.

    Cook the Mushrooms

    Add the mixed mushrooms to the skillet and cook until they are browned and tender, about 5-7 minutes. Season with salt and pepper to taste.

    Prepare the Cream Sauce

    Stir in the chicken stock and heavy cream, bringing the mixture to a simmer. Cook for an additional 5 minutes until the sauce thickens slightly.

    Sauté the Sweetbreads

    In another skillet, melt the remaining tablespoon of butter over medium-high heat. Add the prepared sweetbreads and sauté until golden and crispy, about 4-5 minutes on each side.
