    Prepare the Oven

    Preheat your oven to 325°F (160°C).

    Heat the Cream

    In a saucepan over medium heat, combine the heavy cream, granulated sugar, and a pinch of salt. Stir occasionally until the mixture is hot but not boiling.

    Whisk the Egg Yolks

    In a mixing bowl, whisk together the egg yolks and vanilla extract until smooth.

    Combine Mixtures

    Slowly pour the hot cream mixture into the egg yolks while whisking constantly to temper the eggs. Add the Amaretto liqueur and mix well.

    Strain the Mixture

    Strain the mixture through a fine-mesh sieve into a measuring cup or bowl to remove any solids.

    Pour into Ramekins

    Divide the mixture evenly among ramekins.

    Bake

    Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake for about 30-35 minutes, or until the edges are set but the centers are still jiggly.

    Cool and Refrigerate

    Remove the ramekins from the water bath and let them cool. Once cooled, refrigerate for at least 2 hours or overnight.

    Caramelize the Sugar

    When ready to serve, sprinkle a thin layer of granulated sugar on top of each custard. Using a kitchen torch, caramelize the sugar until it forms a crispy top. If you don't have a torch, broil in the oven for a few minutes until caramelized.
