    Prepare the Squash

    Preheat your oven to 400°F (200°C). Cut the honeynut squashes in half lengthwise and scoop out the seeds. Place them on a baking sheet, cut side up. Drizzle with olive oil and sprinkle with salt and pepper.

    Roast the Squash

    Roast the squash in the preheated oven for about 25-30 minutes, or until they are tender and caramelized.

    Brown the Butter

    In a saucepan, melt the unsalted butter over medium heat. Continue cooking until it turns golden brown and gives a nutty aroma, about 5-7 minutes. Be careful not to burn it.

    Toast the Pine Nuts

    In a small skillet, toast the pine nuts over medium heat for about 3-4 minutes until they are golden and fragrant. Stir frequently to prevent burning.

    Combine Ingredients

    Once the squash is roasted, chop the apple and sage leaves. In a mixing bowl, combine the roasted squash, chopped apple, sage, toasted pine nuts, and the brown butter. Toss gently to mix.

    Transfer the mixture to a serving dish and garnish with additional sage leaves and pine nuts if desired. Serve warm.
