    Prepare the Mornay Sauce

    In a saucepan, melt the butter over medium heat. Add the flour and stir continuously for about 2 minutes to create a roux. Gradually whisk in the milk until smooth, then bring to a gentle simmer. Cook for about 5 minutes until thickened. Stir in a pinch of nutmeg, salt, and black pepper. Remove from heat and mix in half of the grated Gruyère cheese until melted.

    Assemble the Croque Monsieur

    Preheat your oven to 200°C (400°F). On a slice of bread, layer a slice of black forest ham followed by a generous spoonful of Mornay sauce. Top with another slice of bread. Spread a little butter on the top slice.

    Grill the Sandwiches

    Place the assembled sandwiches on a baking tray. Bake in the preheated oven for 10 minutes until golden brown. Remove from the oven, then sprinkle the remaining Gruyère cheese on top of each sandwich and return to the oven for another 5 minutes until the cheese is bubbly and golden.

    Remove from the oven, let cool slightly, then cut in half and serve hot.
