Make the Puff Pastry

    Prepare the Dough

    In a saucepan, combine water, butter, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and add flour all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.

    Add Eggs

    Let the mixture cool slightly, then add the eggs one at a time, mixing well after each addition until smooth and glossy.

    Pipe the Dough

    Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper. Transfer the dough to a piping bag and pipe small mounds (about 1 inch) onto the baking sheet, leaving space between each puff.

    Bake

    Bake for 20-25 minutes until golden and puffed. Do not open the oven door while baking. Remove from the oven and let cool completely.

Prepare the Filling

    Fill the Puffs

    Once the puffs are cooled, use a knife to make a small slit in the side of each puff. Fill with vanilla ice cream using a small scoop or piping bag.

Make the Chocolate Sauce

    Melt the Chocolate

    In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and add the chocolate chips. Stir until smooth and melted.

Serve

    Assemble the Dessert

    Drizzle the melted chocolate sauce over the filled profiteroles and serve immediately.
