    Preheat the Oven

    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, beat the eggs, then mix in the vanilla extract and lemon zest.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the almonds.

    Shape the Dough

    Divide the dough into two equal logs and shape them on the prepared baking sheet, leaving space between each log.

    Bake in the preheated oven for about 25-30 minutes, or until lightly golden and firm to the touch.

    Allow the logs to cool for about 10 minutes, then slice them diagonally into 1/2 inch thick pieces.
