Osso Buco

Method

For the Osso Buco

    Prepare the Veal

    Season the veal shanks with salt and pepper. Dredge in flour, shaking off excess.

    Brown the Veal

    In a large heavy pot, heat olive oil over medium-high heat. Add the veal shanks and brown them on all sides. Remove and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, carrot, celery, and garlic. Sauté until softened.

    Deglaze the Pot

    Pour in the white wine and scrape up the browned bits from the bottom of the pot. Let it simmer for a few minutes.

    Add Liquid and Seasoning

    Return the veal shanks to the pot. Add beef stock, thyme, bay leaves, and lemon zest. Bring to a boil.

    Simmer

    Reduce heat to low, cover, and let it simmer for 1.5 to 2 hours, until the meat is tender.

    Finish and Garnish

    Remove the veal shanks from the pot. Discard the bay leaves. Serve garnished with parsley.

For the Risotto Milanese

    Prepare Broth

    In a saucepan, heat chicken broth and add saffron strands to infuse.

    Sauté Onion

    In a separate heavy pot, melt butter over medium heat. Add finely chopped onion and sauté until translucent.

    Toast Rice

    Add Arborio rice to the pot and stir for 2-3 minutes until the rice is lightly toasted.

    Add Broth Gradually

    Slowly add the warm chicken broth, one ladle at a time, stirring continuously until absorbed. Repeat until the rice is cooked al dente.

    Finish Risotto

    Stir in grated Parmesan cheese, salt, and pepper. Remove from heat and let it rest covered for a few minutes.
