Prepare the Porcini Mushrooms
Soak the dried porcini mushrooms in hot water for about 30 minutes until they are soft. Drain and chop them coarsely, reserving the soaking liquid.

Cook the Pasta
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Combine Cream and Cheeses
Pour in the heavy cream and stir to combine. Gradually add the aged cheddar and Parmigiano Reggiano cheese, stirring until melted and smooth. If the sauce is too thick, add a bit of the reserved mushroom soaking liquid.

Mix in the Pasta
Add the cooked macaroni to the cheese sauce, stirring well to coat. Drizzle in truffle oil, and season with salt and black pepper to taste.
