Method

Cooking the Ragout

    Sear the Meat

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the rolled braised beef and pork ribs with salt and pepper, then sear them until browned on all sides. Remove the meat and set aside.

    Sauté the Vegetables

    In the same pot, add chopped onion, carrot, celery, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.

    Build the Flavor

    Stir in tomato paste and cook for another 2 minutes. Pour in red wine and scrape up any brown bits from the bottom of the pot. Let it simmer for about 5 minutes.

    Simmer the Ragout

    Add the seared meats back to the pot along with beef broth and bay leaves. Bring to a boil, then reduce heat to low, cover, and let simmer for about 2 hours or until the meat is tender.

    Finish the Sauce

    Once the meat is tender, remove it from the pot. Shred the beef and discard the bones from the ribs. Return the shredded meat to the sauce, adjust seasoning with salt and pepper, and stir in chopped parsley.

    Cook the Cavatelli

    In a large pot, bring salted water to a boil. Add cavatelli pasta and cook according to package instructions until al dente. Drain and reserve a cup of pasta water.

    Combine and Serve

    In a large serving bowl, combine the cooked pasta with the ragout. If the sauce is too thick, add some reserved pasta water to reach desired consistency. Serve hot, garnished with more parsley if desired.
