Method

Making the Cannoli Shells

    Prepare the Dough

    In a mixing bowl, combine flour, sugar, cocoa powder, and salt. Mix well. Add in the butter and rub it into the flour mixture until it resembles coarse crumbs. Stir in the egg yolk and white wine or vinegar. Gradually add water until the dough comes together. Knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Roll Out and Cut

    On a floured surface, roll out the dough as thinly as possible. Use a round cutter or glass to cut out circles about 4 inches in diameter.

    Shape the Shells

    Wrap each circle around a cannoli tube, sealing the edges with water. Repeat until all dough is used.

    Fry the Shells

    Heat the vegetable oil in a deep pan to 350°F (175°C). Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels. Let cool before removing the tubes.

Making the Filling

    Prepare the Filling

    In a mixing bowl, combine ricotta, powdered sugar, and vanilla extract. Mix until smooth. Fold in the mini chocolate chips and candied orange peel.

    Fill the Shells

    Using a pastry bag or spoon, fill the cooled cannoli shells with the ricotta filling.

Serving
