Marinate the Chicken
In a bowl, combine soy sauce, brown sugar, honey, rice vinegar, minced garlic, grated ginger, and sesame oil. Whisk until the sugar is dissolved. Add the chicken thighs and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.

Preheat the Grill
Preheat your grill to medium-high heat.

Grill the Chicken
Remove the chicken from the marinade (reserve the marinade) and place it on the grill. Cook for about 6-7 minutes per side, or until the chicken is cooked through and has char marks.

Prepare the Sauce
While the chicken is grilling, pour the reserved marinade into a small saucepan. Bring to a boil and let it simmer for about 5 minutes until it thickens slightly.

Serve
Once the chicken is grilled, brush with the thickened sauce, and garnish with chopped green onions and sesame seeds. Serve hot.
