Prepare the Rice
In a bowl, mix the cooked sushi rice with rice vinegar and sugar. Set aside to cool.

Cook the Spam
Slice the Spam into 8 equal pieces. In a pan over medium heat, cook the Spam slices until they are golden brown on both sides, about 2-3 minutes per side.

Make the Glaze
In a small bowl, mix the soy sauce, mirin, and sesame oil. Pour this mixture over the cooked Spam in the pan and let it simmer for a couple of minutes until the Spam is well-coated and the sauce thickens slightly.

Assemble the Musubi
Place a sheet of nori on a clean surface. Wet your hands and take a portion of the sushi rice, about 1/4 cup, and mold it into a rectangle shape. Place a piece of the glazed Spam on top of the rice, then top with another 1/4 cup of rice. Wrap the nori around the rice and Spam, sealing the edges with a little water.

Cut and Serve
Cut the Spam musubi in half, if desired. Serve warm or at room temperature.
