Prepare the Pork
Season the pork loin with salt and black pepper on both sides.

Coat the Pork
Dredge each piece of pork in flour, dip in beaten egg, and then coat with panko breadcrumbs.

Fry the Pork
In a large skillet, heat vegetable oil over medium-high heat. Fry the coated pork for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Slaw
In a bowl, mix shredded cabbage with a pinch of salt and a little bit of sweet soy sauce. Set aside.

Assemble the Sandwich
Toast the burger buns. Spread spicy mayo on the bottom half, add the fried pork, drizzle with sweet soy sauce and chili sauce, top with the cabbage slaw, and cover with the top bun.

Serve
Cut the sandwich in half and serve immediately with extra chili sauce on the side if desired.
