1. Prepare the Fries
Peel the potatoes and cut them into fry shapes. Rinse in cold water to remove excess starch, then dry thoroughly.
2. Fry the Potatoes
Heat the vegetable oil in a deep fryer or a deep pan to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.
3. Prepare the Spicy Mayo
In a small bowl, mix together the mayonnaise and Sriracha sauce. Adjust the heat to your liking.
4. Prepare the Sweet Soy Sauce
In another bowl, mix together the soy sauce and chili sauce.
5. Assemble the Fries
Place the hot fries on a serving platter. Drizzle with spicy mayo and sweet soy sauce. Sprinkle with sliced green onions and sesame seeds.
