    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry using a clean kitchen towel or paper towels to remove excess moisture.

    Heat the Oil

    In a large heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

    Fry the Potatoes

    Carefully add a batch of potato strips to the hot oil. Fry them for about 4-5 minutes or until they are golden brown and crispy. Do not overcrowd the pot.

    Drain and Season

    Remove the fries using a slotted spoon and drain them on paper towels. While still hot, sprinkle with salt, paprika, garlic powder, and black pepper to taste.

    Serve

    Serve the fries hot with your favorite dipping sauces.
