    Prepare the Pork

    Rub the pork shoulder with BBQ rub and let it marinate for at least 2 hours or overnight in the refrigerator.

    Smoke the Pork

    Preheat your smoker to 225°F (107°C). Place the pork shoulder in the smoker and cook for about 8-10 hours, or until the internal temperature reaches 195°F (90°C).

    Make the Coleslaw

    In a large bowl, mix the coleslaw mix, mayonnaise, apple cider vinegar, and salt. Stir until well combined and set aside.

    Shred the Pork

    Once the pork is done, remove it from the smoker and let it rest for 30 minutes. Shred the pork using two forks.

    Combine with BBQ Sauce

    Toss the shredded pork with the Excavator BBQ sauce until well coated.

    Toast the Rolls

    While the pork is resting, split the Costanzo rolls and toast them until golden brown.

    Layer the pulled pork on the toasted rolls, top with coleslaw, and serve immediately.
