Shrimp Po' Boy Directions
Fry the Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.
Make the Coleslaw
In a large bowl, mix the shredded cabbage and carrot. In a separate small bowl, combine the mayonnaise, Dijon mustard, hot sauce, salt, and black pepper. Pour the dressing over the cabbage mixture and toss to combine.
Prepare the Remoulade
In a small bowl, mix together mayonnaise, Dijon mustard, hot sauce, paprika, and cayenne pepper to create the spicy remoulade sauce.
Assemble the Sandwich
Toast the hoagie rolls. Spread a layer of spicy remoulade on the inside of each roll. Add a generous portion of coleslaw and top with the fried shrimp. Serve immediately.
