Preparation
Prepare the Fingerling Potatoes
Preheat the oven to 400°F (200°C). Wash and halve the fingerling potatoes, then toss them with olive oil, minced garlic, salt, and black pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden and crispy.
Prepare the Salmon
In a small bowl, mix lemon juice, black pepper, and salt. Rub this mixture over the salmon fillets. Heat olive oil in a skillet over medium-high heat. Add the salmon skin-side down and sear for about 4-5 minutes on each side, or until cooked to your liking.
Prepare the Salad
In a large bowl, combine arugula, halved cherry tomatoes, and diced avocado. Drizzle with lemon juice, olive oil, and salt to taste. Toss gently to combine.
Serving
Plate the Dish
On each plate, arrange a portion of the arugula salad. Place the pan-seared salmon fillet on top, and serve with a side of garlic parmesan fingerling potatoes.
