    Prepare the Short Ribs

    Season the short ribs with salt and pepper on all sides.

    Sear the Ribs

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear until browned on all sides. Remove the ribs and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, diced carrots, diced celery, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Allow the wine to reduce by half.

    Add Broth and Herbs

    Return the short ribs to the pot, then add beef broth, bay leaves, and thyme. Bring to a simmer.

    Braise the Ribs

    Cover the pot and reduce heat to low. Let the ribs braise for about 2 to 2.5 hours, or until tender.

    Prepare Mashed Potatoes

    While the ribs are cooking, prepare mashed potatoes according to your preferred recipe.

    Cook Mixed Vegetables

    In a separate pot, cook the mixed vegetables until tender, then drain.

    Serve

    Once the ribs are tender, remove them from the pot. Serve the ribs over a bed of mashed potatoes, topped with the braising liquid and the mixed vegetables.
