Prepare the Apples
Preheat your oven to 350°F (175°C). Core and slice the apples into thin wedges. Toss them with cinnamon and honey in a mixing bowl.

Bake the Apples
Spread the apple mixture in a single layer on a baking sheet and bake for 15-20 minutes, or until tender and lightly caramelized.

Assemble the Melt
On one slice of grilled sourdough, layer baked apples, slices of brie cheese, and a handful of arugula. Top with another slice of grilled sourdough.

Melt the Cheese
Return the sandwich to the skillet, pressing down gently. Cook for 2-3 minutes on each side, or until the brie is melted and gooey.

Serve
Remove from the skillet, slice in half, and serve warm with a sprinkle of salt on top.
