Sausage Ingredients

Method

Sausage Preparation

  1. 1

    Prepare the Sausage Mixture

In a large bowl, combine ground pork, ground beef, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until well combined.

  2. 2

    Stuff the Sausages

Soak the casings in water for at least 30 minutes. Rinse them thoroughly, then stuff the sausage mixture into the casings, being careful not to overfill.

  3. 3

    Twist and Tie the Sausages

Twist the stuffed sausages into links of desired size and tie the ends securely.

  4. 4

    Smoke the Sausages

Preheat your smoker to 225°F (107°C). Smoke the sausages for about 2-3 hours, or until they reach an internal temperature of 160°F (71°C).

  5. 5

    Toast the Buns

While the sausages are smoking, toast the brioche buns on a grill or in the oven until golden brown.

  6. 6

    Serve

Place the smoked sausages on the toasted brioche buns and offer a variety of toppings such as yellow mustard, dijon, sweet jalapeno mustard, ketchup, BBQ sauce, onions, sauerkraut, dill relish, and sweet relish.
