Prepare the Sausage Mixture
In a large bowl, combine ground pork, ground beef, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until well combined.

Stuff the Sausages
Soak the casings in water for at least 30 minutes. Rinse them thoroughly, then stuff the sausage mixture into the casings, being careful not to overfill.

Twist and Tie the Sausages
Twist the stuffed sausages into links of desired size and tie the ends securely.

Smoke the Sausages
Preheat your smoker to 225°F (107°C). Smoke the sausages for about 2-3 hours, or until they reach an internal temperature of 160°F (71°C).

Toast the Buns
While the sausages are smoking, toast the brioche buns on a grill or in the oven until golden brown.
