Sauté the Base
In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.

Add Meats and Spices
Stir in the pulled pork and brisket, mixing well. Add the chili powder, cumin, salt, and black pepper. Stir to combine.

Combine Other Ingredients
Add the canned diced tomatoes, kidney beans, black beans, and beef broth. Stir everything together until well mixed.

Simmer
Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally.

Serve
Ladle the chili into bowls and top with shredded cheese, sour cream, scallions, and pickled jalapenos. Serve with crackers on the side.
