In a bowl, mix together brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper to create a dry rub. Rub the mixture thoroughly over the pork shoulder.

Place the seasoned pork shoulder in a smoker preheated to 225°F (107°C). Smoke for approximately 16 hours, or until the internal temperature reaches 195°F (90°C), ensuring to maintain a consistent temperature throughout the cooking process.

Add BBQ Sauce
Toss the shredded pork with apple cider vinegar and BBQ sauce until evenly coated.

Toast the brioche buns lightly, then pile on the pulled pork mixture, and top with sliced pickles and onions. Serve immediately.
