Brisket

Method

Preparation and Cooking

  1. 1

    Prepare the Brisket

Trim excess fat from the brisket, leaving about 1/4 inch for flavor. Rinse and pat dry.

  2. 2

    Apply the Rub

Evenly coat the brisket with the beef rub, ensuring all surfaces are covered. Wrap in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

  3. 3

    Prepare the Smoker

Soak the apple wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

  4. 4

    Smoke the Brisket

Place the brisket in the smoker and add drained wood chips to the smoker box. Smoke for about 12 hours, or until the internal temperature reaches 195°F (90°C).

  5. 5

    Rest the Brisket

Remove the brisket from the smoker and wrap it in foil. Let it rest for at least 30 minutes.

  6. 6

    Slice and Serve

Slice the brisket against the grain and serve on brioche buns with BBQ sauce, sliced pickles, and onions.
