Prepare the Brisket
Trim excess fat from the brisket, leaving about 1/4 inch for flavor. Rinse and pat dry.

Apply the Rub
Evenly coat the brisket with the beef rub, ensuring all surfaces are covered. Wrap in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Prepare the Smoker
Soak the apple wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

Smoke the Brisket
Place the brisket in the smoker and add drained wood chips to the smoker box. Smoke for about 12 hours, or until the internal temperature reaches 195°F (90°C).
