Marinate the Chicken
In a bowl, mix the sliced chicken with soy sauce, sesame oil, and cornstarch. Let it marinate for about 15 minutes.
Cook the Chicken
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove from the skillet and set aside.
Stir-Fry the Vegetables
In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic, ginger, and all the vegetables (mushrooms, snow peas, carrots, and broccoli). Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
Combine Chicken and Broth
Return the cooked chicken to the skillet. Pour in the chicken broth and stir to combine. Cook for an additional 2-3 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
Serve
Serve hot over steamed rice or noodles.
