Prepare the Ingredients
Gather all ingredients and prepare them: slice the beef, chop the onion, dice the carrot, and slice the green onions.
Cook the Beef
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the beef and stir-fry until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
Sauté the Vegetables
In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic, chopped onion, and diced carrot. Stir-fry for 2-3 minutes until the vegetables start to soften.
Add Rice and Peas
Add the cooked rice and green peas to the skillet. Stir well to combine and cook for an additional 3-4 minutes, allowing the rice to heat through.
Add Soy Sauce and Beef
Return the cooked beef to the skillet. Pour in the soy sauce, and add salt and black pepper. Stir everything together and cook for another 2 minutes.
Garnish and Serve
Finally, stir in the sliced green onions, give a final mix, and serve hot.
