Prepare the Chicken

Slice the boneless chicken breast into thin strips and season with salt and pepper.

Cook the Noodles

In a large pot, bring water to a boil and cook the egg noodles according to package instructions. Drain and set aside.

Stir-fry Vegetables

In a large skillet or wok, heat sesame oil over medium heat. Add minced garlic and ginger, and stir-fry for 30 seconds until fragrant. Add mushrooms, snow peas, and carrots. Cook for about 5 minutes until vegetables are tender-crisp.

Cook the Chicken

Push the vegetables to the side of the skillet and add the sliced chicken. Stir-fry for 5-7 minutes until the chicken is cooked through.

Make the Sauce

In a small bowl, mix together soy sauce, oyster sauce, cornstarch, and water. Pour the sauce over the chicken and vegetables, stirring to combine. Cook for an additional 2-3 minutes until the sauce thickens.

Combine with Noodles

Add the cooked egg noodles and chopped green onions to the skillet. Toss everything together until the noodles are well coated in the sauce. Adjust seasoning with salt and pepper as needed.
