    Prepare the Chicken

    Cut the chicken breasts into bite-sized pieces. In a bowl, whisk the egg and then add the chicken pieces, coating them well.

    Coat the Chicken

    In a separate bowl, add cornstarch. Dredge the egg-coated chicken pieces in cornstarch until fully coated.

    Fry the Chicken

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Fry the chicken pieces in batches until golden brown and cooked through, about 3-4 minutes per batch. Remove and drain on paper towels.

    Make the Sauce

    In the same skillet, lower the heat and add minced garlic. Sauté for about 30 seconds until fragrant. Add soy sauce, Sriracha sauce, and honey. Stir well to combine and let simmer for 2-3 minutes.

    Add the fried chicken back into the skillet with the sauce. Toss to coat well and heat through for another 2 minutes.

    Remove from heat and garnish with chopped green onions and sesame seeds. Serve hot over rice or noodles.
