Prepare the Broth
In a large pot, bring the chicken broth to a boil. Add the dried shiitake mushrooms and let them soak for about 15 minutes until softened.

Add Vegetables
Add the julienned carrots, bamboo shoots, and chopped green onions to the broth. Cook for about 5 minutes until the vegetables are tender.

Add Tofu and Seasonings
Stir in the cubed firm tofu, soy sauce, rice vinegar, white pepper, and sesame oil. Let the soup simmer for another 5 minutes.

Thicken the Soup
In a small bowl, mix the cornstarch with the water to create a slurry. Slowly pour it into the soup while stirring to thicken it.

Add Heat and Eggs
Add chili paste to taste for the desired level of heat. Finally, slowly drizzle the beaten eggs into the simmering soup, stirring gently to create egg ribbons.
