Prepare the Beef
In a bowl, mix the sliced beef with soy sauce, cornstarch, minced garlic, and minced ginger. Let it marinate for at least 15 minutes.

Stir-fry the Beef
Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the beef mixture and stir-fry for about 3-4 minutes until the beef is browned and cooked through. Remove from the skillet and set aside.

Cook the Peapods
In the same skillet, add the remaining tablespoon of vegetable oil. Add the trimmed snow peapods and stir-fry for 2-3 minutes until they are bright green and tender-crisp.

Combine Ingredients
Return the cooked beef to the skillet with the peapods. Stir to combine and cook for an additional 1-2 minutes. Season with black pepper to taste.

Garnish with chopped green onions and serve hot over rice or noodles.
