Prepare the Onion Marmalade
Slice the red onion thinly. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and a pinch of salt, cooking until softened and caramelized, about 10 minutes. Stir in the honey and cook for an additional 2-3 minutes until the mixture thickens slightly. Remove from heat and set aside.

Toast the Walnuts
In a dry skillet over medium heat, toast the walnuts for about 5 minutes, stirring frequently until they are fragrant and lightly golden. Remove from heat and chop coarsely.

Sear the Cheese
In the same skillet, add the remaining tablespoon of olive oil. Slice the Manouri cheese into thick pieces (about 1 cm each), and sear them in the skillet for 2-3 minutes on each side, or until golden brown.

Assemble the Dish
On a serving plate, place the seared Manouri cheese. Top with the red onion marmalade, toasted walnuts, and pomegranate seeds. Garnish with fresh thyme leaves and season with black pepper to taste.
