Prepare the Marinade

In a large bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, chopped cilantro, cumin, salt, and black pepper until well combined.

Marinate the Chicken

Add the chicken cubes to the marinade, making sure they are well coated. Cover the bowl and refrigerate for at least 1 hour, or preferably overnight for better flavor.

Prepare the Vegetables

While the chicken is marinating, chop the bell peppers and red onion into squares. Set aside.

Assemble the Kabobs

Preheat the grill to medium-high heat. Thread the marinated chicken, bell peppers, and red onion onto skewers, alternating between the chicken and vegetables.

Grill the Kabobs

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Serve

Remove the kabobs from the grill and let them rest for a few minutes before serving. Serve with green chickpea hummus and pickled onion.
