    Prepare the Sausage

    In a large skillet over medium heat, add olive oil. Once hot, add the sweet Italian sausage, breaking it up with a wooden spoon. Cook until browned and fully cooked, about 8-10 minutes.

    Add Garlic

    Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.

    Mix in the Tomato Sauce

    Pour in the house-made tomato sauce and stir to combine. Let it simmer on low heat for about 10 minutes. Season with salt, black pepper, and fresh basil.

    Prepare the Cheese Mixture

    In a separate bowl, combine ricotta cheese, half of the mozzarella, and half of the Pecorino Romano. Mix well.

    Assemble the Sporkie

    In a baking dish, spread a thin layer of the tomato sauce mixture on the bottom. Layer half of the cheese mixture, followed by half of the sausage and sauce mixture. Repeat the layers, finishing with the remaining sauce on top.

    Top with Cheese

    Sprinkle the remaining mozzarella and Pecorino Romano cheese on top.

    Bake

    Preheat the oven to 375°F (190°C). Bake for 25-30 minutes or until the top is golden and bubbly.

    Let it cool for a few minutes before serving. Garnish with additional fresh basil if desired.
