Cooking Instructions

  1. 1

    Prepare the Chicken

Preheat your oven to 400°F (200°C). Rub the whole chicken with olive oil, salt, black pepper, and half of the lemon pepper seasoning. Place in a roasting pan and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

  2. 2

    Marinate the Broccoli

In a bowl, combine broccoli florets, minced garlic, remaining lemon pepper seasoning, and lemon juice. Let marinate for at least 30 minutes.

  3. 3

    Cook the Broccoli

Once the chicken has been in the oven for 45 minutes, add the marinated broccoli to the roasting pan. Continue roasting for the remaining 30 minutes, until the chicken is fully cooked and the broccoli is tender.

  4. 4

    Prepare the Cream Sauce

In a small saucepan, combine 1 cup of heavy cream, 1/2 cup of grated Pecorino Romano, and a pinch of salt. Heat over medium-low until the cheese melts and the sauce thickens slightly. Stir frequently to avoid burning.

  5. 5

    Assemble the Dish

Once the chicken and broccoli are done roasting, let the chicken rest for 10 minutes before carving. Serve the carved chicken on a plate, topped with roasted broccoli, shredded mozzarella, and drizzled with lemon pepper cream sauce.
