    Prepare the Ingredients

    Chop the bell peppers, onion, and slice the mushrooms. Set aside.

    Cook the Sausage

    In a large skillet, heat olive oil over medium heat. Add the sweet Italian sausage and cook until browned. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the diced onion, bell peppers, and mushrooms. Sauté until they are soft, about 5-7 minutes. Season with salt and black pepper.

    Combine the Ingredients

    Add the cooked sausage back to the skillet with the sautéed vegetables. Pour in the house-made tomato sauce and stir to combine. Let it simmer for 5 minutes.

    Assemble the Pucillo

    Preheat your oven to 200°C (400°F). Spread the mixture evenly in a baking dish. Top with shredded mozzarella and grated Pecorino Romano cheese.

    Bake

    Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden.
