Mini Cannoli

Prepare the Filling
In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla extract, and mini chocolate chips. Mix until smooth and well combined.

Fill the Shells
Using a piping bag or a spoon, fill each cannoli shell with the ricotta mixture.

Garnish
Dip the ends of each filled cannoli in chopped pistachios. Serve immediately or refrigerate until serving.

Preheat the Oven
Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.

Melt Butter
In a saucepan, melt the unsalted butter over medium heat. Remove from heat and stir in granulated sugar and brown sugar.

Add Eggs and Vanilla
Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.

Mix Dry Ingredients
In a separate bowl, combine flour, cocoa powder, and salt. Gradually mix into the wet ingredients until just combined. Fold in chocolate chips.

Bake
Pour the brownie batter into the prepared pan and spread evenly. Bake for 20-25 minutes or until a toothpick comes out with a few moist crumbs.

Cool and Cut
Allow brownies to cool in the pan before cutting into squares.

Preheat the Oven
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

Cream Butter and Sugars
In a mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla extract until well combined.

In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture until just combined. Fold in chocolate chips.

Scoop tablespoon-sized portions of dough onto the prepared baking sheet. Bake for 10-12 minutes or until edges are golden.

Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
