Making Cannoli

Prepare the Cannoli Shells
In a large bowl, mix flour, sugar, cocoa powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the egg white and wine/vinegar until a dough forms. Wrap in plastic and refrigerate for 30 minutes.

Roll and Cut
On a floured surface, roll out the dough thinly. Cut into circles (about 4 inches in diameter). Wrap each circle around a cannoli form and seal the edges with a bit of water.

Fry the Shells
Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels. Let cool before removing from forms.

Prepare the Cannoli Cream Filling
In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla extract, cinnamon, and chocolate chips. Mix until smooth and well combined.

Fill the Cannoli
Using a pastry bag or spoon, fill each cooled shell with the cannoli cream filling. Dust with powdered sugar before serving.
